Low Syn Muffins (possibly) !!

Using just 4 ingredients 

  • Banana
  • Raspberry
  • Eggs
  • Fry light 

*** due to the fruits being cooked these are to be syned***

1 banana is approximately 190g and I used approximately 50g of frozen raspberries. 

  
So take two banana (which are 4syns per 100g) and mash them up with a fork.  

 Add 4 eggs to the mashed up banana, and mix together. 

Spray your muffin time with frylight then, Place some Raspberries in the bottom of your muffin tray and add the mixture. I used frozen fruit. So once cooked they are 1syn per 100g.  

 Cook at 190/ fan oven for around 20mins. (They wasn’t cooked after 12mins) !!

Then sprinkle with Sweetener 👍🏻

SYN VALUE

16 for banana & 0.5syn for the fruit used so I’d say it’s approximately 2.5syn for each muffin. 

VERDICT

Tangy, So if you like tangy you will love these. I’d also leave them to cool fully 🙂 because the fruit is syned I’m not sure 2.5syn is justified for this type of treat. But great to try out and the kids have fun making them!

Top tip!!! Fully mash the banana as it can give a lumpy texture to the muffin!!
